2023-12: project: upgrade Hayek003's macOS

upgrade Hayek003 from macOS 10.14 AKA Mojave to the most modern macOS, i.e. macOS 14 AKA Sonoma!
the intermediate MacBook to work on in the meantime is BJH's ex-MacBook now called Hayek00_.
it needs to resemble Hayek003 as much as possible.
- unroll the relevant git repos on it!
- installed the most important software on it!
advantages and rewards from that project:
- the following software will still run on Hayek003
- WhatsApp on the desktop
- Signal on the desktop
